Prepping the schnitzel is a three-dish process. Slice the chicken breasts lengthwise into 2 or 3 thin pieces. These chicken slices are first dredged in flour, then dipped in beaten egg, and then coated with panko bread crumbs seasoned with my homemade za’atar and a little salt and pepper to taste. You decide how much seasoning your family would like. My guys like spicy!!
Add a tablespoon or more of olive oil to a frying pan and heat to medium; pan fry until golden brown on each side. Remove the chicken to a baking dish; note that the chicken will not be cooked all the way through yet. Bake in a 350 degree C oven for about 15 minutes to complete the cooking process. This method decreases the amount of oil absorbed into the breadcrumbs.
I always make at least double the amount of schnitzel for meals for the following day, if they last that long!
