Chicken Schnitzel with Za’atar

Chicken Schnitzel is one of the most requested weekday meals in my household. And I aim to please! I use panko bread crumbs for the final coating and mix in different seasonings for variety. This recipe will use the Syrian homemade za’atar blend found in Z is for Za’atar

Prepping the schnitzel is a three-dish process. Slice the chicken breasts lengthwise into 2 or 3 thin pieces. These chicken slices are first dredged in flour, then dipped in beaten egg, and then coated with panko bread crumbs seasoned with my homemade za’atar and a little salt and pepper to taste. You decide how much seasoning your family would like. My guys like spicy!!

Add a tablespoon or more of olive oil to a frying pan and heat to medium; pan fry until golden brown on each side. Remove the chicken to a baking dish; note that the chicken will not be cooked all the way through yet. Bake in a 350 degree C oven for about 15 minutes to complete the cooking process. This method decreases the amount of oil absorbed into the breadcrumbs.

Simple and delicious. Serve with a wedge of lemon and your favourite vegetable or side dish.

I always make at least double the amount of schnitzel for meals for the following day, if they last that long!

    This is an old family favourite. My mother made this with veal. Everyone enjoys this.
