The Best Roasted Greek Potatoes


I had the pleasure to taste these oven roasted potatoes at my friend’s home and couldn’t believe how flavourful they were.   Her son, a wonderful cook, discovered the recipe and what a sweetie, he shared it with me.  They oven bake for almost 1 1/2 hours and are way better than French fries…they are the BEST! Soft and fluffy on the inside and beautifully crusted with the seasoning and roasted on the outside. The original recipe can be found at the link below:

What do you think of when you think of Greek food seasoning?  Garlic, olive oil, lemon and oregano.  And all those flavours are on these potatoes.  Wedge cut about 8 potatoes…and gather up the remaining ingredients:  water, olive oil, lemon juice, chopped garlic (the more the better), dried oregano, salt and pepper.  That’s all you’ll need.


I suggest you line a roasting pan with aluminum foil or parchment paper…the 80 minutes of roasting really takes a toll on the hardware…IMG_6472(Edited)

These are fun to make because you put all the ingredients into the pan and mix them well with your hands..IMG_6474

In a 420ºF oven, roast the potatoes for 40 minutes…IMG_6477(Edited)

Then flip the potatoes over and sprinkle a little more salt, pepper and oregano.  And add more water if the pan is dry.  Roast for an additional 40 minutes.IMG_6478(Edited)

After 80 minutes, your kitchen smells so good from all that garlic, and they are done.
